PHASE 3 Days 36-40 The Makers Diet

Days 36-40 - Well, we have now completed The Makers Diet and have just spent the Easter weekend away camping with no problems, and I can say my Gastritis is healed!  Thank you God! We have had to eat fish n chips and chips on more than one occasion even a piece of birthday cake, I have had no reactions to the wheat or the fat, although the scales might argue that one!
We want to carry on as we both still have weight to lose and apart from that we don't want to fill our bodies with the toxins and indigestible foods and be back in the same place in the future. It has been a journey of discovering about health and what we need to live right but not just from Jordan's book as I scoured the internet too and have found a wealth of information about sprouting and fermenting etc.  I have yet to make a satisfactory bread recipe but as I said before that's going to be practise.  I have decided that I will finish the wheat I have at home and then buy sprouted flour for time saving or a proper mill for grinding as its a chore and a long one in the coffee grinder.
I may still report on our progress from time to time but would fully recommend The Makers Diet for healing any digestive disorder and recommend it for any illness, it can't do you any harm to try and people have claimed to be healed of cancer, diabetes and all sorts of other disorders.

PHASE 3 Days 32 to 35 The Makers Diet

Days 32-35 - Well, what can I say. Sorry I haven't posted for a few days but I've been busy.  Not only is it the school holidays and my kids 18th birthdays (yes, twins), but I've been busy in the kitchen.  I haven't yet made my next sourdough loaf but gonna give that a try this week if I get a chance.  The sprouted flour is not as easy to cook with as I had hoped but made quite a successful naan bread yesterday.  The dough can come out much heavier because it doesn't have as much gluten because of the sprouting process.  However, you can make successful bread but I think its going to take practice but I'm not giving up.  Made some lovely Chocolate Squares which were a real treat and tasted much better than I thought. They contained cashews and almonds that had been soaked and dried, dates, bit of honey, coconut oil oh! And cocoa powder of course!. All blended together to make fudge brownies and they were delicious.
Well weve completed week 3 and now have 5 days to go as we finish on good Friday.  Hubby's weight loss has been quite dramatic so far, mine is slower to come off but going to keep an eye on it this week to make sure it is actually still dropping.
Health wise, In my earlier posts I said I was sleeping better, I could now lay on both sides and the diarrhoea and constipation had ceased. However, I was still getting up in the night about 3 times for the toilet and was having nausea still. But, I can honestly say that this week, I have had no nausea and the only time I've got up for the toilet is at 7am everyday! Sleeping right through. So I think I'm healed and if my gastritis is not completely healed it won't be long before it is. Thank you Jordan, and thank you God.

PHASE 3 Day 31 The Makers Diet

Day 31 - Well tasted the sourdough for breakfast and all I can say it its not my cup of tea, not rye sourdough anyway.  Could possibly eat it with smoked meats and other strong tastes but not on its own, slice thinly.  Lunch was a sweet potato jacket with cheese again, (my favourite at the moment).  Dinner was a roast lamb shank with roast sweet and normal potatoes, but not too many, cabbage and cauliflour served in a mint gravy made with lamb stock.  Having a go at making souerkraut which seems to be relatively easy but will take a while.  Discovered some facts about Apple Cider Vinegar, very very good for the digestive system, some people also claiming that it had healed them taking it daily.  So I have a bottle with the mother so have bought some organic apples to day to make some apple juice and am going to make my own with the mother from the bottle I have.  More weight loss for me and hubby, it still seems to vary but seem to be down another 3/4lbs.  Hubby down about another 5lbs.  Feeling better slowly off of the milk.

PHASE 3 Day 30 The Makers Diet

Day 30 - Busy day today, now finally making my sourdough bread and trying out the sprouted tortillas.  Spent most of the day experimenting.  Tried first pulsing the soaked wheat grain into a dough and made the tortillas but they didnt seem to come out right so I then dried the grain and milled it in my coffee grinder and made the tortillas that way.  This seemed to be better, however, I was still having problems with my tortillas going hard, I believe I have since learned that I cooked them too long on too high a heat and it is imperative to get a medium heat and to not cook them for too long.  I was looking for bubbles to form but this didnt always happen and consequently they were overcooked.  Finally finished by sourdough at 11pm so will taste that in the morning.  Breakfast was sausage, egg and mushrooms, lunch was breakfast (a brunch) and dinner was Lemon Chicken with egg fried brown rice, delicious.  Didnt think Ill be able to have chinese again, but was lovely.  Will put recipe for lemon chicken on this site.

PHASE 3 Day 29 The Makers Diet

Day 29- No breakfast today, got up late but snatched a piece of coconut bread before I went out. Lunch was large portabello mushrooms stuffed with mincemeat and topped with cheese served with small salad. Dinner was a homemade chicken Saag curry with a small portion of brown rice, was very nice to have something different.  My sourdough starter was ready just before bed so made up the dough and letting it rest again now until tomorrow when I can hopefully bake it.  My grain is slowly sprouting so that should be ready by the morning to try making tortillas.  Feeling better when I'm off milk so sticking off that for now until I heal fully.

PHASE 2 Days 25 to 28 The Makers Diet

Days 25 to 28 - Been working hard which has made it difficult to blog but also difficult to diet. Have missed meals which hasn't really done us any harm.  Need to up my intake of fruit and veg I think, they say you get use to a food after 2 weeks of eating it, but I'm still struggling with my salad and veggies, eating them but not in vast quantities.  Still suffering with some gas and nausea although again! I didn't listen to myself and had another hot chocolate with goats milk. Its the goats milk that seems to do it. So, I made my own almond milk and have used that on day 28 so I'm going to have to give that a couple of weeks and see if there's any improvement.  Have been wondering whether I needed to go organic for quicker health improvement but just too expensive.  Will have to give myself time.  My hydrator has finally arrived in working order and all my grains arrived too.  My rye sourdough starter has been brewing for 50 hours at time of blogging so will soon be ready to make bread.  My wheat grain has been soaking overnight hoping to make sprouted tortillas either today or tomorrow if they're ready.  We now move onto phase 3 of the diet.

PHASE 2 Day 24 of The Makers Diet

Day 24 - Well! doing okay.  Dont feel like iv'e lost any more weight, or that my health has improved anymore at the moment, but then I guess we don't know what's going on on the inside of us.  Thinking Im going to have to change my diet slightly to include more vegetables at breakfast or fruit and yoghurt instead of my usual eggs, mushrooms and tomato which has now been enhanced with a beef or turkey sausage if we can find some without pork in.  Made some flax crackers last night.  My dehydrator is clearly not working so I have had to send it back and order another one which should be here before the weekend.  Lunch yesterday was a brunch so dinner was a lamb steak coated in herbs and served with a stir fry of veg and beansprouts.  I will put the recipe on here for my flax crackers, these were dried in the oven which actually I think turned out okay.  They could have done with a little more drying time but it got to midnight so I just left them in a hot oven to dry overnight.  When I woke they were a bit soft still but crispy on the ends and crispy enough to eat.  Treated myself to a hot chocolate made with bourneville 100% cocoa only and coconut milk, sweetened with a little maple syrup.
